The Swan/Duck
The swan/duck is a very easy model to fold. If you omit the last step it looks like a duck, and if not it looks closer to a swan, so take your pick.
Step 1: Fold a kite base and have the white triangle pointing to the right
Step 2: Valley fold the top half to the bottom half so the two line up
Step 3: Orient the paper so the bottom is straight. This makes it easier to work with and visualize.
Step 4: Valley fold the left corner up at the angle shown
Step 5: Crease and unfold
Step 6: Mountain fold the same flap at the same angle
Step 7: Crease and unfold
Step 8: Open the bottom of the paper up and outside reverse fold the flap up and around so it looks like the picture below
Step 9: Valley fold the tip of the flap you just folded so it is parallel to the base of the bird
Step 10: Crease and unfold
Step 11: Mountain fold the tip at the same angle, crease, and unfold
Step 12: Open the little flap up and outside reverse fold it to form the head. If you want to make a duck, you are now done.
Step 13: To make a swan, take the bottom edges and fold part of them inside to slim the body and make it more of a swan.
